You already know this...the new car salesperson uses emotions to push you over the edge and get your signature on the purchase agreement.
I don't see anything wrong with this...after all, most of our decisions are, to some degree, based on emotions.
If handled right, this can give YOU an advantage in the negations.
Let's look at some very basic emotional tools the salesperson uses...
Scarcity...this is the last one, I can't get anymore, one of a kind, etc.
The best way around this is to NOT fall in love with a specific new car. If you can't help falling in love with the car...don't let the sales person know about it!
The truth is, there are more vehicles just like it. Sure they may need to order it from another Dealer or from the factory...but there's a 99.9 chance that they will be able to find an identical vehicle.

The Salesperson is trying to play on your "fear of loss" to push you into a buying decision without knowing all the facts.
Any car that is gone forever will be replaced by an even better one...you just have to keep looking.
